Depth is pretty unimportant to composting worms. As long as they have 4 inches of bedding, they are happy.
As to stocking densities, that’s a lot more of an in depth question.
As a rule of thumb, composting worms will max out at 2 lbs per square foot of SURFACE AREA (multiply inches long x inches wide and divide by 144 to get square feet) – but thats in PERFECT conditions, so I say they will probably max out at 1 to 1.5 lbs/sqft.
